Are National Food Holidays even real? They are in my book and I’ll do anything to celebrate food. Thursday, July 16th is National Corn Fritter Day and while corn fritters are traditionally not the healthiest choice, a better-for-you version is worth a try.
I bring to you, a Zucchini Corn Fritter recipe. Corn is not considered a nutrient-dense food but the zucchini is perfectly in season and adds valuable fiber and minerals such as potassium which is most noted for its roles in blood pressure regulation and muscle contractions. The chickpea flour in this recipe also adds some plant-based protein to keep you fuller just a little bit longer.
