  • Arugula Cantaloupe and Blackberry Salad with Honey-Lime Vinaigrette and Feta

    Serves: 4

    Ingredients

    • 1 tsp Honey
    • 1 Tbsp Fresh Lime Juice
    • 2 Tbsp, 1 tsp Olive Oil
    • 6 cups Arugula
    • 2 cups Cantaloupe Chunks
    • 1 cup Fresh Blackberries
    • ¼ cup Crumbled Feta Cheese
    • ¼ cup Fresh Red Onions, ⅛” Sliced

    Method

    • Combine honey, lime juice and olive oil for a broken vinaigrette. Set aside.
    • Wash and dry al produce. Place 6 cups of arugula into a serving bowl. Top with cantaloupe, blackberries, feta and red onion. Drizzle with dressing.
