How could I ignore National Chocolate Chip Cookie Day?! Listen, I know it’s not the staple of health but in my book, if it makes you happy, it also keeps you well. As much as I would like to recognize chocolate chip cookies, let’s embrace this Chocolate Chip, Peanut Butter Energy Bites recipe instead.

Along with all the yumminess provided by these energy bites, there are some healthy ingredients too. Rolled oats contain notable amounts of fiber and flax seeds have vitamin E and omega-3 fatty acids. They’re easy to make, include no baking and are therefore a great quarantivity for all.

Chocolate Chip, Peanut Butter Energy Bites

Yields: 20

Portion Size: 1 each

Ingredients

  • 1 cup rolled oats
  • ⅔ cup shredded coconut
  • ½ cup flax seeds, ground
  • ½ cup chocolate chips
  • ⅓ cup honey
  • 1 tsp vanilla extract

Method

  • In a large bowl mix all ingredients together until well combined. Break into 40 even pieces and roll each into a ball. Serve at room temperature.
