Corn Fritters!
Zucchini Corn Fritters

Ingredients
- 4 cups shredded zucchini
- 1 ½ cups corn kernels (fresh, frozen or canned)
- ¾ cup chopped green onions
- 3 garlic cloves
- 1 ¼ cup chickpea flour
- 2 tsp ground cumin
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp salt & pepper
- Oil
Method
- In a large bowl, combine shredded zucchini, corn, green onions, chickpea flour, garlic, cumn, oregano, thyme, salt & pepper. Stir together until well blended. Allow to sit for 5 minutes until the mixture becomes a batter consistency and the chickpea flour has absorbed all the moisture from the zucchini.
- Warm a large non-stick skillet over medium heat. Heat 1 Tbsp oil in pan. Scoop ¼ cup of zucchini and corn mixture into the skillet forming a patty. Cook for 3-5 minutes on each side or until golden brown.
- Suggested toppings include warm black beans, salsa or avocado cream. Enjoy!
