  • The superfood of the month is tomatoes! While technically the fruit of plants, tomatoes are commonly used as vegetables and were legally defined as vegetables for tax purposes by the Supreme Court in 1893. There are more than 4,000 varieties of tomatoes varying in size, color and flavor.

Tomatoes provide vitamins, minerals, fiber and high levels of the antioxidant lycopene. Tomatoes are one of the most commonly consumed vegetables in the US, with more than 22 pounds of tomatoes eaten each year per person.

  • When in season and full of flavor, use tomatoes raw or very lightly cooked in recipes. A little salt will bring out the flavor even more. Stay tuned throughout August for more fun facts and recipes relating to this luscious fruitable.
