Tomatoes provide vitamins, minerals, fiber and high levels of the antioxidant lycopene. Tomatoes are one of the most commonly consumed vegetables in the US, with more than 22 pounds of tomatoes eaten each year per person.

When in season and full of flavor, use tomatoes raw or very lightly cooked in recipes. A little salt will bring out the flavor even more. Stay tuned throughout August for more fun facts and recipes relating to this luscious fruitable.
