Recipe of the Month from Cooking School’s Chef Sydney

Chef Sydney:

This chocolate tart is a recipe I enjoy every year around March, when the winter feels endless and I need recipes that make me feel warm and cozy. The tart is incredibly easy and quick to make, starting with a store-bought crust and utilizing a no-bake filling. The recipe is flexible - you can add a little sweetener like honey, swap the vanilla for a different extract, or garnish the top with flaky sea salt. You can also make your own crust. Whether you use store-bought or homemade, the type of crust is flexible, as you can use pie dough, tart dough, or cookie crust. Graham cracker is my personal favorite!

Velvety Chocolate Tart

Makes one 9 inch (23 cm) tart

Ingredients:

1 store-bought (9 inch / 23 cm) pie or tart crust

1 cup + 2 tbsp (265 mL) heavy or whipping cream

12 oz (340 g) good-quality semisweet chocolate, chopped

1 tbsp (14 g) butter, cold and cubed

1 tsp (5 g) vanilla paste or extract

A pinch of salt

Instructions:

  1. Place the chocolate in a heatproof mixing bowl. Separately, heat the cream until just simmering (if using a saucepot on the stove, stir often). Once the cream is simmering, immediately pour it over the chocolate; shake the bowl quickly if needed to help submerge the chocolate under liquid. Let sit a few minutes until the cream is lightly cooled.
  2. Stir the chocolate cream mixture until smooth. Add butter, vanilla, and salt, and stir again until evenly mixed. Pour the mixture into the tart shell, lightly tap on the counter to remove air bubbles, and then smooth with a warm, offset spatula or the back of a spoon. Transfer to the refrigerator and chill for 1 – 2 hours until set.

Recipe of the Month from Cooking School’s Chef Brian

Chef Brian:

A perfectly cooked steak is an easy skill to master at home. With a few tips and tricks, you can learn to cook steaks with a crisp brown crust and tender center - and skip the trip to the steakhouse. For the recipe below, we are using a tenderloin cut of beef, which has a great texture and low fat. To balance the lean meat, we will baste the steak with butter as it cooks, reinforcing the brown crust while insulating the meat to keep it moist.

Butter-Basted Steak

Serves 4

Ingredients:

4 (6oz or 170g) center-cut beef tenderloin steaks

High-heat cooking oil

Kosher salt and freshly ground black pepper, to taste

4 tbsp butter (56 grams), cubed and chilled

2 cloves garlic, lightly smashed

Instructions:

  1. To sear the steaks: Place a large skillet over high heat and add a thin layer of oil. Gently pat the steaks dry with paper towels and season well with salt and pepper. When the oil is just smoking, carefully place steaks in pan (do not overcrowd; cook in batches if necessary). Let cook undisturbed until deeply browned, about 3 - 4 minutes.
  2. To baste the steaks: Before basting, have a large spoon within reach. When steaks are browned on the first side, flip steaks and begin basting: add garlic and butter to the pan and use your non-dominant hand to slightly tilt the pan, allowing the butter and garlic to pool at the bottom. With the spoon in your dominant hand, carefully spoon the melting butter over the steaks. When the butter stops foaming and begins to brown and smell nutty, remove the pan from heat. Remove the steaks and let rest 5 minutes before slicing against the grain.

Calling all coffee lovers! Join us from Monday, March 23 through Friday, March 27 for an exquisite coffee tasting as you vote for your new pantry coffee brand. Special Events at the 2B Café

Our cafeteria continues to delight and surprise us all month long with several tasty offerings that will be available on the days listed below. Don’t miss out on these special items from 11:30 a.m. - 2:30 p.m.:

  • In celebration of Ramadan, the Fruit & Nut Bazaar will include dates as one of the dried fruit options from March 1 to March 29.
  • In celebration of Lent, the Global Buffet will offer Fish & Chips crisped to perfection every Friday during March.
  • In celebration of March Madness, the Global Buffet will serve game-day essentials on March 17, including Chicken Tenders served with BBQ or Honey Mustard sauce, Mini Pretzels, Hot Dogs, French Fries, Corn on the Cob, Coleslaw, Macaroni Salad, and Mixed Greens Salad.

Indoor Running Club

Become a part of our supportive community by joining our weekly indoor running club! No experience is required, as all skill levels are welcome. We will meet at the Fitness Center Reception Desk on Tuesdays at 5:00 p.m. to run on the treadmills. Please kindly note a gym membership is required to use the treadmills. In addition, our hydration station will be open regularly to all UBS employees in the Battery Park Room on Floor 2B - a place to refuel with nutritious refreshments after the run. We can't wait to run with you!

Get Screened, Get Ahead: Colorectal Cancer Awareness

March is Colorectal Cancer Awareness Month. Colorectal cancer is the third most common cancer diagnosed in both men and women in the United States. Early detection greatly increases the chances of successful treatment.

Key Facts:

  • Screening saves lives: Regular screening can prevent colorectal cancer by finding and removing polyps and/or detecting specific DNA biomarkers in your stool.
  • Risk increases with age: Most cases are diagnosed in people over the age of 50.
  • Know your family history: Talk to your doctor if you have a family history of colorectal cancer that may prompt screening at an earlier age.
  • 1 in 23 men and 1 in 25 women will develop colorectal cancer.
  • About 64% of colorectal cancers are diagnosed at a localized stage with a 90% 5-year survival rate.

Take Action:

  • Schedule your screening if you are 45+ (or earlier if high risk).
  • Know your family medical history.
  • Stay active and maintain a healthy diet.

Smart Tips for Reading Menus

Ordering out can be a fun way to celebrate or unwind after a busy week - but navigating a menu isn’t always simple. With oversized portions, tempting descriptions, and limited nutrition details, making choices that align with your health goals can feel overwhelming. The good news? A few smart strategies can help you order with confidence.

Many chain restaurants are required to list calorie information directly on menus or menu boards. While calories don’t tell the whole story, they can help you compare options and make more informed decisions. Additional nutrition details - like sodium, saturated fat, and fiber - are often available upon request or online, so planning ahead can reduce the pressure to decide quickly.

If nutrition information isn’t available, pay attention to menu language. Words like crispy, battered, breaded, creamy, and Alfredo often signal higher amounts of calories and saturated fat. Instead, look for items described as grilled, baked, roasted, steamed, or marinara for lighter preparation methods.

Portion size matters, too. Consider splitting an entrée, saving half for later, or sharing dessert. Don’t forget that sides and beverages contribute calories - choosing water, unsweetened tea, or low-fat milk can make a meaningful difference.

Most importantly, remember that nutrition is personal. Focus on balance, variety, and satisfaction. Small, consistent choices - like adding vegetables or ordering sauces on the side - can support your long-term healthy eating routine while still allowing you to enjoy dining out.

Sustainability Tips

As winter begins to give way to spring, our daily choices - both at work and at home - can make a meaningful difference. Practicing sustainability doesn’t require major lifestyle changes. In March, consider focusing on a few practical habits that are easy to maintain:

  • Be mindful of energy use as daylight hours increase. Turn off lights, unplug unused devices, and make the most of natural light.
  • Rethink consumption by choosing reusable items, reducing food waste, and prioritizing durable or responsibly-sourced products.
  • Talk about sustainability with colleagues! Sharing ideas and learning from one another helps build momentum.

This month also offers additional opportunities to learn more and engage with sustainability beyond our individual routines. On March 24, the GHRCS Expo will be held at EMA, featuring a table where you can learn about UBS’s in-house environmental program as well as the Americas Sustainability Network.

March is also the month of Earth Hour, which will take place on March 28. Earth Hour is a global initiative that encourages individuals and organizations to switch off non-essential lights and electronics for one hour as a symbol of commitment to environmental responsibility. Many UBS sites participate in this initiative, serving as a reminder that collective action can reinforce the importance of reducing our environmental footprint.
