National Corn Fritter Day

Are National Food Holidays even real? They are in my book and I’ll do anything to celebrate food. Thursday, July 16th is National Corn Fritter Day and while corn fritters are traditionally not the healthiest choice, a better-for-you version is worth a try.

I bring to you, a Zucchini Corn Fritter recipe. Corn is not considered a nutrient-dense food but the zucchini is perfectly in season and adds valuable fiber and minerals such as potassium which is most noted for its roles in blood pressure regulation and muscle contractions. The chickpea flour in this recipe also adds some plant-based protein to keep you fuller just a little bit longer.

Superfood Spotlight - Cantelopes!

Did you know that cantaloupes are named for the papal gardens of Cantalupo, Italy, where some historians say this species of melon was first grown?

Cantaloupes deserve to belong to the superfood of the month for many reasons but the one we’re going to focus on today is the carotenoid beta-carotene. Carotenoids are a type of phytonutrient that gives the pigment called beta-carotene it’s orange color. The level of beta-carotene in cantaloupes is significantly greater than it’s orange friends apricots, peaches and mangoes.

Why is this so great? Beta-carotene is a precursor to Vitamin A. This means your body can convert the pigment to the very precious Vitamin known for health benefits such as immunity and eye health.
